Any camera which is capable of capturing images in RAW. Using the RAW format and capturing ALL the information, not just the BW, is important for post processing adjustments in range, tonality and contrast. Disregard features such as BW mode as these are little more then gimmicks. Any color image can be converted to BW in post processing later to better effect.
At present most current digital SLRs are capable of capturing images in RAW format. Canon and Nikon are the most versatile cameras as far as lens availability, Canon DSLRs are better at higher ISOs and if you are working in low light without a flash this must be a consideration. Otherwise I would say any current Canon or Nikon DSLR will get you excellent results.
